Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the garlic, onion, and bell pepper, and cook until softened.
- Stir in chicken breasts, zucchini, cumin, chili powder, salt, and pepper.
- Cook until the chicken is no longer pink and the zucchini is tender.
- Garnish with fresh cilantro before serving.
Notes
Store leftovers in an airtight container in the fridge for up to three days. Reheat on the stove or microwave when ready to serve.
