Ingredients

  • 1/2 cup heavy cream
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 vanilla bean, split and seeds scraped (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. In another bowl, whisk together the cream, egg, vanilla extract, and vanilla bean seeds.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined.
  6. Turn the dough out onto a floured surface and gently knead it a few times until it comes together.
  7. Pat the dough into a circle about 1 inch thick and cut into wedges.
  8. Place the scones on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until golden brown.
  9. Let cool slightly before serving.
