- 1 zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1 cup broccoli florets
- 1 cup asparagus, trimmed and cut into pieces
- Salt and pepper to taste
- Grated Parmesan cheese (optional)
- Fresh basil or parsley for garnish
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat.
- Add the onion and garlic, sautéing until fragrant.
- Add the bell pepper, zucchini, broccoli, and asparagus; cook until the vegetables are tender.
- Stir in the cherry tomatoes and cook for an additional 2-3 minutes.
- Season with salt and pepper.
- Toss the cooked pasta with the vegetable mixture.
- Serve hot, garnished with Parmesan cheese and fresh herbs.
