- 6 large eggs
- 0.5 cup full-fat Greek yogurt (unsweetened)
- 1 tablespoon baking powder (aluminum-free)
- 0.25 cup melted butter or coconut oil
- 0.25 teaspoon salt
- 0.5 teaspoon xanthan gum or psyllium husk powder
- 0.5 cup finely ground almond flour (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, whisk the eggs until well beaten.
- Add the full-fat Greek yogurt to the eggs and mix until blended.
- Stir in the melted butter or coconut oil.
- In a separate bowl, mix together the baking powder, salt, xanthan gum or psyllium husk powder, and almond flour.
- Gradually add the dry ingredients to the egg mixture, stirring until smooth.
- Pour the batter into a greased loaf pan and smooth the top.
- Bake for 30-35 minutes or until the top is golden and a toothpick comes out clean.
- Allow to cool before slicing.
Notes
Serve with butter or sugar-free jam. Store in an airtight container at room temperature for up to three days or freeze for up to three months.
