A light and fluffy zero-carb yogurt bread that is quick and healthy, perfect for snacks or meals.

Ingredients

  • 6 large eggs
  • 0.5 cup full-fat Greek yogurt (unsweetened)
  • 1 tablespoon baking powder (aluminum-free)
  • 0.25 cup melted butter or coconut oil
  • 0.25 teaspoon salt
  • 0.5 teaspoon xanthan gum or psyllium husk powder
  • 0.5 cup finely ground almond flour (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk the eggs until well beaten.
  3. Add the full-fat Greek yogurt to the eggs and mix until blended.
  4. Stir in the melted butter or coconut oil.
  5. In a separate bowl, mix together the baking powder, salt, xanthan gum or psyllium husk powder, and almond flour.
  6. Gradually add the dry ingredients to the egg mixture, stirring until smooth.
  7. Pour the batter into a greased loaf pan and smooth the top.
  8. Bake for 30-35 minutes or until the top is golden and a toothpick comes out clean.
  9. Allow to cool before slicing.

Notes

Serve with butter or sugar-free jam. Store in an airtight container at room temperature for up to three days or freeze for up to three months.
