Ingredients
1 (16 oz) package potato gnocchi
2 cups cooked shredded chicken
8 oz cream cheese
1 cup chicken broth
1 cup shredded cheddar cheese
4 slices cooked bacon, chopped
1 packet ranch seasoning
1 cup fresh spinach (optional)
Instructions
1. Boil gnocchi according to package; drain and set aside.
2. In a skillet, cook bacon until crispy. Remove and set aside.
3. In the same pan, melt cream cheese with chicken broth and ranch seasoning until smooth.
4. Add cooked chicken, gnocchi, cheddar, and spinach. Stir until combined and heated.
5. Top with crispy bacon and serve hot.
Notes
Use rotisserie chicken for convenience. Add red pepper flakes or buffalo sauce for a kick. Great with crusty bread or a side salad.
