Sweet, salty, crispy and creamy, these honey feta sweet potato rounds are the ultimate easy appetizer or holiday side.

Ingredients

2 medium sweet potatoes, sliced into 1/2-inch rounds

2 tbsp olive oil

1/2 tsp garlic powder

Salt and black pepper, to taste

1/2 cup crumbled feta cheese

2 tbsp honey (plus more for drizzling)

Chopped parsley or thyme (optional)

Crushed walnuts or pecans (optional)

Instructions

1. Preheat oven to 400°F and line a baking sheet with parchment.

2. Toss sweet potato slices with olive oil, garlic powder, salt, and pepper.

3. Arrange on baking sheet and roast 25–30 minutes, flipping halfway.

4. Remove from oven and top each round with crumbled feta.

5. Return to oven for 3–5 minutes until feta is warmed.

6. Drizzle with honey and sprinkle with herbs or nuts if using.

7. Serve warm.

Notes

Try goat cheese or whipped ricotta as a variation.

Make ahead by roasting the rounds and adding toppings later.

Use an air fryer for crispier results in less time.
